For the Rice:

- 1 tbsp cumin seeds
- Small cinnamon stick
- Black cardamom
- Green cardamom
- Peppercorns
- Cloves
- 1 tsp rose water
- Orange and yellow food colouring
For the Raita:
- 1 cup yogurt
- 1 tbsp mayonnaise
- Handful of coriander and mint leaves
- 6 cherry tomatoes
- Salt and pepper to taste
- 2 green chilies

- In boiling water, add cumin seeds, cinnamon, black cardamom, green cardamom, peppercorns, and cloves.
- Add 4 cups of rice, cook for 6 minutes until 60% done.
- Layer the Biryani:
- Add 2 cups of rice to the meat, ensuring an even spread.
- Sprinkle fried onions, fresh coriander, mint leaves, green chilies, melted ghee, and saffron-infused milk.
- Add the remaining 80% cooked rice.
- Drizzle more saffron milk, rose water, green chilies, coriander, mint, fried onions, and ghee.
