Sooji Hawla

Sooji Halwa, also known as Semolina Pudding, is a popular dessert in South Asian cuisine. It’s made from roasted semolina, ghee, and sugar, and often includes nuts and fruits for added flavour and texture.

Ingredients:

  • 2.5 cups melted ghee
  • 3 cups fine semolina powder
  • 0.5 cup whole almonds
  • 0.5 cup whole pistachios
  • 0.5 cup halved cashews
  • 0.5 cup raisins
  • 1 tbsp green cardamom powder
  • 2 cups brown sugar
  • 0.5 cup chopped pineapples
  • 0.5 cup glacier cherries
  • 6 cups water
  • 1 tbsp poppy seeds

Instructions:

  1. Prepare the Ghee and Semolina:
    • Add melted ghee to a deep cooking pot.
    • Introduce fine semolina powder and cook over low heat, stirring continuously until it all comes together.
  2. Add the Nuts and Raisins:
    • Once combined, add almonds, pistachios, cashews, and raisins. Mix well.
    • Then add green cardamom powder for a fragrant touch.
  3. Incorporate the Sugar and Fruits:
    • Add brown sugar and continue mixing until well combined.
    • Introduce chopped pineapples and glacier cherries, stirring to evenly distribute the fruits.
  4. Add Water and Cook:
    • Pour in water and stir continuously for a minimum of 10 minutes as the water is absorbed. This process may take up to 20 minutes.
    • Increase the heat to medium as the mixture thickens, but keep stirring to avoid burning the bottom.
  5. Final Cooking Stage:
    • Once the halwa reaches a thick consistency, reduce the heat to low and let it cook for 1 hour. Stir every 10 minutes to ensure even cooking.
    • Alternatively, you can bake it in the oven at 120 degrees Celsius for an hour.
  6. Finishing Touch:
    • Add poppy seeds, give it one last mix, and the Sooji Halwa is ready!
