Marry Me Chicken, also called Tuscan chicken, is floured and pan-fried chicken in a creamy sauce of butter, onions, garlic, oregano, rosemary, sun-dried tomatoes, spinach, double cream and cheese. Aamna and Husain add a little ginger and chilli for their own touch.

Marry Me Chicken

It’s ready in about 50 minutes and uses a mix of chicken breasts and thighs. Finish with fresh basil.

Why this recipe works

  • Floured chicken. A light coating gives a golden crust and helps thicken the sauce.
  • The browned bits. Most of the oil comes out but the flavour stays, and butter lifts it off the pan.
  • Sun-dried tomatoes and herbs. They give the sauce its rich, savoury Tuscan flavour.
  • Cream and cheese. They make it silky and indulgent.

Tips for the best Marry Me Chicken

  • Leave the chicken alone for 3 minutes. It lets a golden crust form.
  • Pour off most of the oil. Keep about 20% for the sauce.
  • Boil the broth briefly. Two minutes deepens the flavour before the cream goes in.
  • Use breasts and thighs. Thighs stay juicier, and breasts cook quickly.

Prepare the Chicken:

  1. Season the chicken pieces with salt and black pepper. No need for long marination, just a quick mix, and we’re good to go.
  2. Coat the chicken in plain flour, shaking off excess. This helps create a beautiful golden crust when frying.

Fry the Chicken:

  1. Heat the oil in a dry frying pan over medium heat.
  2. Add the chicken pieces carefully, don’t touch them for the first 3 minutes to allow a golden crust to form.
  3. Once golden brown, remove the chicken. It will finish cooking in the sauce.

Build the Flavourful Sauce:

  1. Remove 80% of the oil, leaving behind the browned bits. Add butter and let it melt, scraping the pan to absorb all that flavour.
  2. Add sliced onions and a pinch of salt. Cook until golden and soft (about 7 minutes).
  3. Stir in ginger and garlic paste, sautéing for a minute until fragrant.

Add the Spices & Tomatoes:

  1. Stir in oregano, rosemary, chili powder, mustard, and sun-dried tomatoes.
  2. Cook for a minute, ensuring the spices release their aroma without burning.
  3. Add tomato puree and cook for another minute to remove the raw tomato taste.

Deglaze & Simmer:

  1. Pour in chicken broth, increasing the heat slightly. Let it gently boil for 2 minutes, this deepens the sauce’s flavour.
  2. Stir in fresh spinach and let it wilt into the sauce.

Make it Creamy & Rich:

  1. Pour in double cream, stirring continuously to blend into a luxurious, silky sauce.
  2. Add half of the grated cheese, letting it melt into the sauce.

Bring Back the Chicken:

  1. Add the golden-fried chicken pieces back into the pan, flipping them to coat in the sauce.
  2. Let it cook for 5 minutes, allowing the flavours to meld while the sauce thickens to perfection.

Final Touch & Serving:

  1. Garnish with freshly chopped basil. The fresh herbs elevate the flavours beautifully.
  2. Serve with toasted bread or go all out with buttery, creamy mashed potatoes, because a dish this indulgent deserves a side just as decadent!
