Ingredients:

For Marinating Lamb Neck:

  • Lamb neck
  • 1/4 cup oil
  • 2 heaped tbsp garlic paste
  • 1 tbsp Kashmiri red chilli powder
  • 1 tsp salt
  • 1 tsp black pepper powder
  • 3 tbsp Arabian spice mix
  • Juice of one large lemon

For Aromatic Rice:

  • 2 cups basmati rice
  • Saffron strands
  • 2 tbsp ghee
  • 1 cup chickpeas
  • Large raisins
  • Carrots, cut into small batons

For Broth and Garnish:

  • 1/4 cup oil
  • 2 sliced onions
  • 1 tbsp cumin seeds
  • 1 tbsp coriander seeds
  • 1 tsp cloves
  • 1 tbsp peppercorns
  • 1 small cinnamon stick
  • 2 black cardamoms
  • 1 tbsp green cardamom
  • 3 bay leaves
  • 4 green chillies
  • 1 dried lime

For Spicy Sauce:

  • 1 bunch coriander
  • 1 large onion
  • 1 large tomato
  • 3 green chillies
  • 6 garlic cloves
  • 1 tsp salt
  • 1 tsp black pepper
  • 4 tbsp water

For Saffron Concoction:

  • Juice of 1 lemon
  • 1/2 tsp orange colour
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp saffron strands
  • 2 tbsp oil
  • 4 tbsp meat broth

Instructions:

Marinating Lamb Neck:

  1. In a bowl, combine oil, garlic paste, Kashmiri red chilli powder, salt, black pepper powder, Arabian spice mix, and lemon juice.
  2. Thoroughly mix and marinate the lamb neck for 3 hours or overnight.

Aromatic Rice Garnishes:

  1. In a pan, heat ghee. Fry chickpeas for 5 minutes, then add raisins and carrot batons. Set aside.

Broth and Garnish:

  1. In a pan, heat oil. Add sliced onions, cumin seeds, coriander seeds, cloves, peppercorns, cinnamon stick, black cardamoms, green cardamom, bay leaves, green chillies, and dried lime.
  2. Fry for 3 minutes until aromatic. Introduce the marinated lamb neck, sear on each side, and pour enough water to cover the meat.
  3. Bring to a boil, remove excess scum, cover with foil and a lid, and let it cook on low for 2 hours.

Rice Preparation:

  1. While the meat cooks, blend ingredients for the spicy sauce.
  2. Create the saffron concoction by combining lemon juice, orange colour, salt, black pepper, saffron strands, oil, and meat broth.

Roasting Lamb Neck:

  1. Once the meat is cooked, transfer it to a roasting pan and let it cool.
  2. Transfer the meat broth to a larger pot, add additional water to make 8 cups for the rice. Bring to a boil, add the rice, and cook on low for 20 minutes.

Final Assembly:

  1. Coat the meat with the saffron concoction and roast in the oven for 15 minutes.
  2. Pour the leftover saffron concoction over the rice.
  3. Serve the roasted lamb neck on top of the aromatic rice, garnished with fried onions and toasted cashews.
