This vegetable rice is a simple side: basmati rice cooked with mixed vegetables, whole cumin, bay leaf, black and green cardamom and green chillies in a little ghee. It’s ready in about 35 minutes.

Aamna uses frozen mixed vegetables for speed, rinsed in hot water before frying. It goes with almost any curry on the site.
Why this recipe works
- Whole spices in ghee. They flavour every grain of rice.
- Vegetables fried first. A few minutes in the spiced ghee gives them more flavour.
- Simmered and covered. About 20 minutes on low heat makes the rice fluffy.
Tips for the best vegetable rice
- Rinse frozen vegetables. Hot water removes ice so they fry rather than steam.
- Wash the rice. It removes excess starch for separate grains.
- Don’t lift the lid. Let the rice cook undisturbed.
- Fluff with a fork. Do it gently once the water is absorbed.

Note
Use long-grain rice like Basmati for a fluffy texture. Rinse the rice several times before cooking to remove excess starch.
You can use any combination of mixed vegetables like peas, carrots, beans, and corn. Fresh or frozen both work well.
Adjust the number of green chilies based on your heat preference. You can also add other spices like cloves or cinnamon for extra flavour.
Ensure you use the right amount of water for your rice. Typically, the ratio is 1 part rice to 1.5 parts water for Basmati rice.
Using ghee adds a rich flavour to the rice. If you prefer, you can use oil or butter as a substitute.
Cook the rice on low heat to prevent it from burning and ensure even cooking.
